Potatoe Bread with Nuts
Before I came to Spain I never baked a bread. Only here I started bread baking. My first breads were like hard and heavy door stoppers = disaster. This experience was not very motivating and I stopped baking. When my supermarket began to sell bread mixes and I tried again with more success. Step by step and with the help of Petra from Chili & Ciabatta, I started to bake real bread means bread with sourdough. My breads are no door stopper anymore. ;-) Bread baking needs experience, feeling, time and patience.
As I already mentioned in Switzerland I always bought bread. Our favorite was the potatoe bread with nuts from Migros. After baking a while I found the perfect formula, and you know what: Homemade bread tastes much better than bought one, therfore I would like to invite anyone to join World Bread Day 2009 - Yes we bake.
Potatoe Bread with Nuts
makes 1 medium-size loaf 270 g active sourdough starter
7 g fresh yeast
1 boiled potato (+/- 200 g)
450 wheat flour
150 g whole wheat flour
about 330 g water
14 g salt
75 g walnuts, coarsely chopped
75 g hazelnuts, coarsely chopped
Peel and mash the freshly boiled potato. Dissolve yeast in 50 g water. Dissolve sourdough in rest of the water. Add all ingredients expect salt in the mixer bowl. Mix on low speed 1.5 for 4 minutes, add salt and mix for another 4 minutes on speed 2.
Cover and let rise for 60-75 minutes. Make 1 Stretch & Fold after 30 minutes.
Shape dough into a long loaf, cover and let rise 60 minutes. In the meantime preheat oven to 240 C.
Before baking make 3-4 evenly spaced slashes with a very sharp knife.
Bake for 10 minutes, open oven door to release steam, reduce heat to 220 C and bake another 10 minutes, than again open oven door quickly and reduce heat to 200 C and bake 20 minutes. Remove loaf from oven and let cool on a wire rack.
