BBD #29 - Buttermilk Bread with Sunflower Seeds in Pots

Recently I planted some sunflowers in pots, as you can see here. You can also see on these pics, that the plants suffered from the last heavy rain. I hope they will recover, right now it seems they do. Yeah!
Buttermilk Bread with Sunflower Seeds in Pots
makes 2 (pot size 10 cm in height) Preferment
75 g all purpose flour
50 g water
1,3 g fresh yeast
1,3 g salt
Final dough
50 g spelt flour
125 g all purpose flour
50 g sunflower seeds
100 g buttermilk (room temperature)
15 g water
10 g fresh yeast
preferment from above
5 g salt
Preferment: Mix all ingredients together, knead and let rise for 2 hours at room temperature then put in fridge overnight (12 to 24 hours). Before using let preferment get back to room temperature.
Soak pots for about 20 minutes in cold water.
Final dough: Dissolve yeast in 15 g water. Add buttermilk to the preferment and dissolve, too. Add all ingredients except salt and knead on low speed for 4 minutes. Add salt and mix another 6 minutes on a higher speed. Cover and let rise for 60 minutes. Divide dough into 2 equal pieces form rounds or snails and place in pots, sprinkle with sunflower seeds. Cover and let rise for about 40 minutes. Preheat oven to 200 C, bake for about 45 minutes.
