Picnic could be so romantic, if there weren't these ants and other bugs everywhere even in the food. I hate it! But for Johanna I made an exception and picnicked on the grass. ;-)

We are grilling every second or third day, so I often have some leftover grilled vegetables. I store them in the fridge. I don't discard the juice of the vegetables because it's very tasty and give a special taste to the following salad and to other dishes too.

Couscous Salad with grilled vegetables*
serves 2

140 g instant couscous
120 g water
juice of grilled vegetables
3 tb olive oil
1/2 onion, finely chopped
1 garlic, finely chopped

grilled bell pepper, cut into small cubes
grilled aubergine, cut into small cubes
fresh parsley finely chopped
2 tb lemon juice
1 tb white balsamico vinegar
3 tb homemade tomato juice
salt and pepper

Heat the olive oil add the onion and garlic and sauté until soft. Add water and juice of grilled vegetables, bring to a boil. Add couscous, reduce heat cover and let stand for 5 minutes. Add rest of the ingredients, mix well. Pour the salad in a jar with a lid. Refrigerate.

*Amount of vegetables can vary according to taste.
