Waiter there's something in my... Couscous Salad
Lovely Johanna from thepassionatecook is hosting the WTSIM summer edition. She is looking for picnic recipes.
Picnic could be so romantic, if there weren't these ants and other bugs everywhere even in the food. I hate it! But for Johanna I made an exception and picnicked on the grass. ;-) We are grilling every second or third day, so I often have some leftover grilled vegetables. I store them in the fridge. I don't discard the juice of the vegetables because it's very tasty and give a special taste to the following salad and to other dishes too.
Couscous Salad with grilled vegetables*
serves 2 140 g instant couscous
120 g water
juice of grilled vegetables
3 tb olive oil
1/2 onion, finely chopped
1 garlic, finely chopped
grilled bell pepper, cut into small cubes
grilled aubergine, cut into small cubes
fresh parsley finely chopped
2 tb lemon juice
1 tb white balsamico vinegar
3 tb homemade tomato juice
salt and pepper
Heat the olive oil add the onion and garlic and sauté until soft. Add water and juice of grilled vegetables, bring to a boil. Add couscous, reduce heat cover and let stand for 5 minutes. Add rest of the ingredients, mix well. Pour the salad in a jar with a lid. Refrigerate.
*Amount of vegetables can vary according to taste.
