Waiter, there's something in my... Pollo tonnato

Andrew from SpittoonExtra is hosting this month's Waiter, there's something in my... Sauces is his theme. Pollo tonnato is one of my favorite summer dish. Traditionally it is made with "vitello" (veal), as it's difficult to find good veal here, I make it with "pollo" (chicken). I can assure, it's delicious too. |
Pollo tonnato (recipe in German)
serves 2 (starter) 1 boneless, skinless chicken breast
2 dl homemade chicken broth
Tuna sauce
1 small can tuna in oil (80g), drained
1 anchovy fillet
1 ts mustard
2 tb broth (see above)
1,5 tb Mayonnaise
Garnish
1 boiled egg
black olives
capers
Bring to boil the broth, add chicken beast, reduce heat an let simmer for about 25-30 minutes. Remove from heat and let cool.
Tuna sauce
Put the all ingredients in a food processor and mix until smooth.
When the pollo has cooled slice it finely and lay the slices out on a plate (just one layer). Spread the sauce over the pollo. Cover it with plastic wrap and chill it in the refrigerator. Before serving garnish the plate with egg slices, capers and olives.
