WHB #87: Marinated Feta

Marinated feta feta cheese, cubed
fresh rosemary, chopped
fresh thyme, chopped
fresh oregano, chopped
garlic, sliced into slivers (or less depending on taste)
dried tomatoes, chopped
black peppercorns, crushed
good olive oil
Let simmer fresh herbs and garlic in olive oil for about 5 minutes. Let cool. Place all ingredient in a preserving jar. Cover with oil, seal bowl and refrigerate for at least 2 days before open it. Serve on french bread, lightly toasted, with olives, fresh sliced veggies, red wine, etc.
