Quick Soup: Noodles-Chicken-Lemon-Soup
I had some cooked chicken breast left. Homemade broth is always on stock, noodles also and lemons grows on my own lemon trees.* So I could prepare the following soup (or is it a hotpot?) for The Super Souper Challenge organized by running with tweezers.
If you have all ingredients by hand it's ready in 5 minutes. This is quick, isn't it?
Noodles-Chicken-Lemon-Soup
makes 2

4 dl chicken broth (homemade if possible)
200 g cooked chicken breast, cut into pieces of 1-2 cm
80 g Asian style noodles (ready in 4 minutes)
grated lemon zest of 1 lemon
basil
Bring to boil broth, lemon zest and chicken. Reduce heat add noodles leave to simmer for 4 minutes. Ready to serve!
* Oh no, as soon as I hear/read lemon tree, I remember Fool's Garden song refrain:
