2nd Onion Day - Spaghetti with Onion Sauce
Yesterday we could celebrate Onion Day for the second time. As host of the event I had to participate of course. ;-)
I prepared a simple but tasty onion sauce served and served it with Spaghetti.
Spaghetti with Onion Sauce
serves 1 1 big onion, sliced & separated into rings
olive oil and ghee
salt, pepper
4-5 tb white wine
parsley, chopped
Parmesan, grated
100 g Spaghetti
I sautéed the onion rings with a little salt in ghee and olive oil just for a few minutes, then I closed the Hotpan and let it stand for 5 minutes on low temperature then I placed it for the rest of the time (about 50 minutes) in its insulating bowl. Once the onion rings were tender I placed the Hotpan back to the stove. Let evaporate all liquid added white wine and let evaporate again. Seasoned with salt and pepper. At the end the onions should have a nice golden tan.
Then I cooked the Spaghetti in plenty of salted water, drained them when "al dente".
I mixed Spaghetti, parmesan, parsley and sauce and served it immediately.
